This exhibit covers a wide range of food-related topics: diet and nutrition science, agriculture and farming, food insecurity and public policy, and psychological aspects of eating.

The substances we depend upon for sustenance affect our immune systems, our ability to recover from illness or injury, and play a role in the prevention of chronic illnesses such as heart disease, osteoporosis, and obesity. 

While the environmental impact of farming on natural resources is problematic, there are promising, sustainable options to improve nutritional quality. Psychologically, the relationship between “diet culture”, body image and food industry marketing are often at odds with one another, contributing to disordered eating habits.

From historical offerings and clinical texts to examinations of fad diets, these books explore how food and nutrition affect our bodies, our communities, and the role they play in health and disease.
